Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let sit for 10 minutes.
  3. Drain excess moisture from the zucchinis.
  4. In a large bowl, mix the drained zucchini, flour, eggs, Parmesan, green onions, black pepper, and garlic powder.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of the mixture into the pan and flatten slightly.
  7. Fry for 3-4 minutes on each side until golden brown.
  8. Remove from the pan and place on paper towels to drain excess oil.
