- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Oil for frying
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let sit for 10 minutes.
- Drain excess moisture from the zucchinis.
- In a large bowl, mix the drained zucchini, flour, eggs, Parmesan, green onions, black pepper, and garlic powder.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the pan and flatten slightly.
- Fry for 3-4 minutes on each side until golden brown.
- Remove from the pan and place on paper towels to drain excess oil.
Notes
- Serve with yogurt or sour cream.
- Can be made ahead and reheated.
- Use fresh zucchini for best taste.
