Ingredients

- 1 whole turkey (12–14 lbs)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cups vegetable broth (Whole30 compliant)
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- 1 tablespoon fresh sage
Instructions
- Preheat your oven to 350°F (175°C).
- Rub the turkey with olive oil, salt, and pepper.
- Place the chopped vegetables in the roasting pan.
- Add vegetable broth to the pan.
- Put the turkey on top of the vegetables.
- Roast the turkey for about 3 hours, or until the internal temperature reaches 165°F (75°C).
- Let the turkey rest before carving.
Notes
- Use fresh herbs for better flavor.
- Make sure all ingredients are Whole30 compliant.
- Consider serving with a side of roasted vegetables.
