Ingredients

- 2 cups black beans, rinsed and drained
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large bowl, combine black beans, corn, tomatoes, red onion, and bell pepper.
- Add avocado and cilantro to the mixture.
- Drizzle lime juice over the salad.
- Season with salt and pepper.
- Toss gently to combine.
- Top with shredded cheese if desired.
- Serve chilled or at room temperature.
