Delicious vegan main dishes perfect for Thanksgiving.
Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a skillet, sauté onion and garlic until translucent.
- Add bell pepper, corn, black beans, cumin, paprika, salt, and pepper. Cook for 5 minutes.
- Combine quinoa with the vegetable mixture.
- Garnish with fresh cilantro before serving.
Notes
- Adjust spices to your taste.
- Serve warm or at room temperature.
- This dish can be made a day in advance.
