  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. In a skillet, sauté onion and garlic until translucent.
  4. Add bell pepper, corn, black beans, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  5. Combine quinoa with the vegetable mixture.
  6. Garnish with fresh cilantro before serving.
