Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. Combine quinoa and vegetable broth in a pot.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, corn, bell pepper, and avocado.
  6. Add cooled quinoa to the bowl.
  7. Drizzle lime juice, add cumin, salt, and pepper.
  8. Toss everything together and serve chilled or at room temperature.
