Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 lime, juiced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and vegetable broth in a pot.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine black beans, corn, bell pepper, and avocado.
- Add cooled quinoa to the bowl.
- Drizzle lime juice, add cumin, salt, and pepper.
- Toss everything together and serve chilled or at room temperature.

- This dish can be made a day in advance.
- Store leftovers in an airtight container in the fridge.
