Ingredients

- 2 cups cooked quinoa
- 1 cup black beans, rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the quinoa, black beans, corn, bell pepper, onion, and garlic.
- Add cumin, chili powder, salt, and pepper. Mix well.
- Transfer the mixture to a baking dish.
- Bake for 25 minutes or until heated through.
- Top with avocado slices and cilantro before serving.
Notes
- This dish can be served warm or at room temperature.
- Feel free to add other vegetables as desired.
- Store leftovers in an airtight container in the fridge.
