A creamy and flavorful vegan version of lobster bisque.
Ingredients

- 1 cup cashews, soaked
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup mushrooms, chopped
- 4 cups vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked cashews.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots, celery, and mushrooms, cook until soft.
- Add vegetable broth, tomato paste, and Old Bay seasoning.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend the mixture until smooth, then return to pot.
- Stir in lemon juice, salt, and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- Soak cashews for at least 4 hours for a creamy texture.
- Adjust seasoning to your preference.
- For a spicier kick, add a pinch of cayenne pepper.
