Description

A hearty and flavorful vegan version of Hoppin’ John, a traditional Southern dish.


Ingredients

  • 1 cup black-eyed peas, dried
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 carrot, diced
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • 2 cups cooked brown rice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Soak black-eyed peas overnight in water.
  2. Drain and rinse the peas.
  3. In a pot, sauté onion, garlic, bell pepper, and carrot until soft.
  4. Add black-eyed peas, vegetable broth, thyme, bay leaf, and smoked paprika.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Stir in the cooked brown rice.
  7. Season with salt and black pepper.
  8. Serve warm.
