Description
A hearty and flavorful vegan version of Hoppin’ John, a traditional Southern dish.
Ingredients

- 1 cup black-eyed peas, dried
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 carrot, diced
- 1 teaspoon thyme
- 1 bay leaf
- 1 teaspoon smoked paprika
- 2 cups cooked brown rice
- Salt to taste
- Black pepper to taste
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse the peas.
- In a pot, sauté onion, garlic, bell pepper, and carrot until soft.
- Add black-eyed peas, vegetable broth, thyme, bay leaf, and smoked paprika.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in the cooked brown rice.
- Season with salt and black pepper.
- Serve warm.

- Adjust seasoning to your taste.
- Serve with cornbread for a complete meal.
