A vegan twist on the traditional Southern dish, Hoppin’ John.


Ingredients

  • 1 cup black-eyed peas
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice

Instructions

  1. Soak black-eyed peas overnight.
  2. Drain and rinse peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion, garlic, and bell pepper. Cook until soft.
  5. Add black-eyed peas, vegetable broth, thyme, and smoked paprika.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Add cooked brown rice and mix well.
  8. Season with salt and pepper.
  9. Serve hot.
