Ingredients

- 1 cup dried black eyed peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Soak black eyed peas overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and bell pepper; sauté until soft.
- Add black eyed peas, vegetable broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Check for doneness and adjust seasoning if needed.
- Serve hot.

- Serve with rice or bread.
