- 1 lb beef tenderloin
- 2 cups fresh spinach

Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef tenderloin with salt, pepper, and oregano.
- Heat olive oil in a skillet and sear the beef on all sides.
- Transfer the beef to the oven and roast for 25-30 minutes.
- In a separate pan, sauté garlic in olive oil.
- Add spinach and cherry tomatoes and cook until wilted.
- Slice the beef and serve over the spinach and tomatoes.
- Sprinkle feta cheese on top and serve with crusty bread.
