Ingredients

  • 2 cups basmati rice
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1 cup paneer, cubed
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Rinse the basmati rice in water until the water runs clear.
  2. Soak the rice in water for 30 minutes.
  3. Heat oil in a pan and add cumin seeds.
  4. Add chopped onions and sauté until golden brown.
  5. Stir in ginger-garlic paste and cook for a minute.
  6. Add chopped tomatoes and cook until soft.
  7. Add mixed vegetables and paneer, cooking for 5 minutes.
  8. Add soaked rice, salt, and garam masala.
  9. Add 4 cups of water and bring to a boil.
  10. Reduce heat, cover, and simmer for 15-20 minutes.
  11. Remove from heat and let it sit for 5 minutes before serving.

  • Serve with raita or salad.
