Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- In a pan, heat olive oil and add cherry tomatoes. Sauté for 3-4 minutes.
- Add spinach and cook until wilted.
- Mix cooked quinoa with sautéed vegetables, feta cheese, lemon juice, salt, and pepper.
- Serve warm or chilled.

- Great for meal prep.
- Can substitute feta with vegan cheese for a dairy-free option.
- Add grilled chicken for extra protein.
