Ingredients

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large egg yolks
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and granulated sugar over medium heat until sugar dissolves.
- Remove from heat and stir in the vanilla extract.
- In a bowl, whisk the egg yolks.
- Slowly pour the cream mixture into the egg yolks while whisking.
- Pour the mixture into ramekins.
- Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes until set.
- Cool to room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a kitchen torch.

- Let the brulee chill properly for a smooth texture.
