Instructions

  2. In a clean bowl, beat egg whites until foamy.
  3. Add cream of tartar and continue beating until soft peaks form.
  4. Gradually add sugar, one tablespoon at a time, until stiff peaks form.
  5. Mix in vanilla and almond extracts.
  6. If using, add food coloring and gently fold to combine.
  7. Spoon or pipe meringue onto a lined baking sheet.
  8. Bake for 1.5 to 2 hours until dry and crisp.
  9. Turn off the oven and let cookies cool inside.
