A healthy and delicious meal perfect for Valentine’s Day.


Ingredients

Scale
  • 2 cups quinoa
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Add quinoa to the vegetable mixture and pour dressing over it.
  9. Toss to combine and serve chilled or at room temperature.

Notes

  • This dish can be made a day in advance.
  • Feel free to add your favorite vegetables.
  • Store leftovers in the refrigerator for up to 3 days.
