Ingredients

- 2 cups butter beans
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon rosemary, chopped
- 1 teaspoon thyme, chopped
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 lemon, juiced
- Fresh parsley, chopped for garnish
Instructions
- Soak the butter beans overnight.
- Drain and rinse the beans.
- In a pot, heat olive oil over medium heat.
- Add garlic, rosemary, thyme, and red pepper flakes. Sauté until fragrant.
- Add the soaked butter beans and cover with water.
- Bring to a boil, then reduce heat and simmer until beans are tender.
- Season with salt, pepper, and lemon juice.
- Garnish with fresh parsley before serving.

- Can substitute butter beans with cannellini beans.
- Adjust seasoning according to taste.
