Ingredients

- 2 slices whole grain bread
- 1 ripe avocado
- 1 large tomato
- Salt to taste
- Pepper to taste
- Lemon juice (optional)
Instructions
- Toast the bread slices until golden brown.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork and add salt, pepper, and lemon juice.
- Slice the tomato.
- Spread the mashed avocado on one slice of bread.
- Layer the tomato slices on top of the avocado.
- Top with the second slice of bread.
- Cut the sandwich in half and serve immediately.
