A warm and comforting sweet potato casserole with a crunchy topping.
Ingredients

- 4 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
- 1/4 cup melted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix mashed sweet potatoes, brown sugar, milk, eggs, vanilla, cinnamon, and nutmeg.
- Spread the sweet potato mixture in a greased baking dish.
- In a separate bowl, combine mini marshmallows, chopped pecans, and melted butter.
- Sprinkle the marshmallow mixture on top of the sweet potato layer.
- Bake for 30 minutes or until heated through and the topping is golden brown.
Notes
- Let cool for a few minutes before serving.
- Can be prepared ahead of time and baked before serving.
- Adjust sugar based on your sweetness preference.
