Description

A tasty and healthy vegetarian dish featuring sweet potatoes and black beans.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Boil sweet potatoes in water until tender, about 15 minutes.
  2. Drain and mash sweet potatoes in a bowl.
  3. Add black beans, cheese, cumin, paprika, salt, and pepper to the mashed sweet potatoes.
  4. Heat olive oil in a pan over medium heat.
  5. Spread the sweet potato mixture onto half of each tortilla.
  6. Fold tortillas in half and cook on both sides until golden brown, about 3-4 minutes.
  7. Cut into wedges and serve warm.
