A tasty and healthy vegetarian dish featuring sweet potatoes and black beans.
Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Boil sweet potatoes in water until tender, about 15 minutes.
- Drain and mash sweet potatoes in a bowl.
- Add black beans, cheese, cumin, paprika, salt, and pepper to the mashed sweet potatoes.
- Heat olive oil in a pan over medium heat.
- Spread the sweet potato mixture onto half of each tortilla.
- Fold tortillas in half and cook on both sides until golden brown, about 3-4 minutes.
- Cut into wedges and serve warm.

- Serve with salsa or guacamole.
- Try adding spinach for extra nutrients.
