Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/3 cup rice vinegar
- 3 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 cucumber, julienned
- 1 avocado, sliced
- 8 ounces raw fish (like salmon or tuna), sliced
- Soy sauce for serving
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot. Bring to a boil, then reduce heat and cover. Cook for 20 minutes.
- Mix rice vinegar, sugar, and salt in a bowl until dissolved.
- Once rice is cooked, let it cool slightly and then mix in vinegar mixture.
- Lay a sheet of nori on a bamboo mat.
- Spread a thin layer of rice over the nori, leaving a small border at the top.
- Add cucumber, avocado, and fish in a line across the rice.
- Roll the sushi tightly using the mat, sealing the edge with a little water.
- Slice rolls into bite-sized pieces with a sharp knife.
- Serve with soy sauce.
