Ingredients

- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell peppers, black beans, corn, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill before serving.
