Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine black beans, corn, bell pepper, and avocado.
  6. Add cooled quinoa to the bowl.
  7. In a small bowl, mix lime juice, cumin, salt, and pepper.
  8. Pour dressing over the salad and mix well.
  9. Serve chilled or at room temperature.

Notes

  • Can add grilled chicken or shrimp for extra protein.
