Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 can of black beans, rinsed
- 1 cup of corn, frozen or fresh
- 1 red bell pepper, diced
- 1 avocado, diced
- Juice of 2 limes
- 1 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff the quinoa with a fork.
- In a large bowl, combine quinoa, black beans, corn, and red bell pepper.
- Add lime juice, cumin, salt, and pepper. Mix well.
- Top with diced avocado before serving.
Notes
- This dish can be served warm or cold.
- Feel free to add other vegetables like tomatoes or cucumbers.
- Garnish with cilantro for extra flavor.
