Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff the quinoa with a fork.
  6. In a large bowl, combine quinoa, black beans, corn, and red bell pepper.
  7. Add lime juice, cumin, salt, and pepper. Mix well.
  8. Top with diced avocado before serving.
