Ingredients

- 2 cups of fresh vegetables (zucchini, bell peppers, tomatoes)
- 1 pound of chicken breast
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 cup of quinoa
- 4 cups of vegetable broth
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breast with olive oil, garlic powder, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Chop the grilled vegetables and mix them with cooked quinoa.
- Slice the grilled chicken and serve on top of the quinoa mixture.
Notes
- Feel free to add your favorite herbs.
- Serve with a side salad for a complete meal.
- Store leftovers in an airtight container in the fridge.
