Delicious strawberry cupcakes perfect for Valentine’s Day.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup fresh strawberries, chopped
- 1 cup powdered sugar
- 1/4 cup cream cheese, softened
- 1 tablespoon milk (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, cream butter until fluffy. Add eggs one at a time, mixing well.
- Stir in vanilla extract and milk. Gradually add the dry ingredients to the wet mixture.
- Fold in the chopped strawberries.
- Pour batter into cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting.
- For frosting, beat cream cheese and powdered sugar until smooth. Add milk to reach desired consistency.
- Frost the cooled cupcakes and garnish with whole strawberries if desired.
