Instructions

- Place the roast bone-side down in a roasting pan.
- Roast for 20 minutes, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness (about 1.5-2 hours for medium-rare).
- Let the roast rest for 15-20 minutes before slicing.
