Description
Fresh spring rolls served with a creamy peanut sauce.
Ingredients
- Rice paper wrappers – 10 pieces
- Rice noodles – 1 cup
- Carrots, julienned – 1 cup
- Cucumber, julienned – 1 cup
- Red bell pepper, julienned – 1 cup
- Fresh herbs (mint, cilantro) – 1/2 cup
- Shrimp, cooked and sliced – 1 cup (optional)
Instructions
- Soak rice noodles in hot water for 10 minutes.
- Prepare a clean surface for rolling.
- Dip rice paper in warm water for 10 seconds.
- Lay the rice paper on the surface.
- Add a small amount of noodles, vegetables, herbs, and shrimp (if using).
- Fold the sides of the rice paper over the filling.
- Roll tightly from the bottom up.
- Repeat until all ingredients are used.
- Serve with peanut sauce.
Notes
- Make sure to keep the rice paper moist while rolling.
- You can customize the filling to your liking.
- Peanut sauce can be made in advance and stored in the fridge.
