Ingredients

  • Rice paper wrappers – 10 pieces
  • Rice noodles – 1 cup
  • Carrots, julienned – 1 cup

  • Red bell pepper, julienned – 1 cup
  • Fresh herbs (mint, cilantro) – 1/2 cup
  • Shrimp, cooked and sliced – 1 cup (optional)

Instructions

  1. Soak rice noodles in hot water for 10 minutes.
  2. Prepare a clean surface for rolling.
  3. Dip rice paper in warm water for 10 seconds.
  4. Lay the rice paper on the surface.
  5. Add a small amount of noodles, vegetables, herbs, and shrimp (if using).
  6. Fold the sides of the rice paper over the filling.
  7. Roll tightly from the bottom up.
  8. Repeat until all ingredients are used.
  9. Serve with peanut sauce.
