- 2 cups fresh spinach, chopped

- 1 clove garlic, minced
- 1/2 teaspoon cumin

- 1/4 teaspoon black pepper
- 1 egg, beaten
- Oil for frying
Instructions
- In a bowl, mash the black-eyed peas.
- Add chopped spinach, onion, garlic, cumin, salt, and pepper.
- Stir in the flour and beaten egg until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Fry until golden brown on both sides.
- Remove and drain on paper towels.
- Serve warm.
