Ingredients

- 1 cup black-eyed peas
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Soak black-eyed peas overnight and drain.
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in bell pepper and cook for 3 minutes.
- Add diced tomatoes, cumin, chili powder, and black-eyed peas.
- Cover with water and bring to a boil.
- Reduce heat and simmer for 45 minutes until peas are tender.
- Season with salt and garnish with cilantro before serving.
