Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/2 lb sushi-grade tuna, diced
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 tablespoon soy sauce
- 1 avocado, sliced
- 2 tablespoons green onions, chopped
- Vegetable oil for frying
- Salt to taste
Instructions
- Rinse sushi rice until water runs clear.
- Combine rice and water in a pot; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Let rice cool and shape into small rectangles.
- Heat oil in a pan and fry rice rectangles until golden brown.
- Mix tuna, mayonnaise, sriracha, and soy sauce in a bowl.
- Top each crispy rice piece with tuna mixture and avocado slices.
- Garnish with green onions and serve immediately.
