Description

A hearty and spicy dish made with black eyed peas.


Ingredients

  • 1 cup dried black eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. Soak the black eyed peas in water overnight.
  2. Drain and rinse the peas.
  3. In a pot, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until soft.
  5. Add jalapeño, cumin, and paprika, cook for 2 minutes.
  6. Add the black eyed peas and water. Bring to a boil.
  7. Reduce heat, cover, and simmer for 1 hour or until peas are tender.
  8. Add salt to taste before serving.

Notes

  • Adjust spice level by adding more or less jalapeño.
  • Serve with rice or cornbread.
