Description
A hearty and spicy dish made with black eyed peas.
Ingredients

- 1 cup dried black eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeño pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Soak the black eyed peas in water overnight.
- Drain and rinse the peas.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add jalapeño, cumin, and paprika, cook for 2 minutes.
- Add the black eyed peas and water. Bring to a boil.
- Reduce heat, cover, and simmer for 1 hour or until peas are tender.
- Add salt to taste before serving.
Notes
- Adjust spice level by adding more or less jalapeño.
- Serve with rice or cornbread.
