Ingredients

- 1–2 jalapeños, minced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt, to taste
Instructions
- In a bowl, combine the black-eyed peas, tomato, red onion, and jalapeños.
- Add the chopped cilantro and lime juice.
- Mix well and season with salt.
- Let it sit for 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
