Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon cayenne pepper (optional)

Instructions

  1. Rinse the black-eyed peas and soak them overnight.
  2. Drain the peas and set aside.
  3. In a large pot, heat olive oil over medium heat.
  4. Add chopped onion and garlic, and sauté until soft.
  5. Add soaked peas, water, bay leaf, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour.
  7. Check for tenderness, and adjust seasoning as needed.
  8. Serve warm, garnished with cayenne pepper if desired.
