- 1 pound dried black eyed peas
- 6 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Rinse the black eyed peas and soak them in water for 8 hours or overnight.
- Drain and set aside the peas.
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic. Sauté until softened.
- Add the ham hock, black eyed peas, water, salt, black pepper, cayenne, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until peas are tender.
- Remove the ham hock, shred the meat, and return it to the pot.
- Serve warm with cornbread or rice.
Notes
- Adjust seasoning to taste.
- For vegetarian version, omit ham hock.
- Store leftovers in the refrigerator for up to 4 days.
