Ingredients

  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black eyed peas and soak them in water for 8 hours or overnight.
  2. Drain and set aside the peas.
  3. In a large pot, heat olive oil over medium heat.
  4. Add the chopped onion and garlic. Sauté until softened.
  5. Add the ham hock, black eyed peas, water, salt, black pepper, cayenne, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until peas are tender.
  7. Remove the ham hock, shred the meat, and return it to the pot.
  8. Serve warm with cornbread or rice.
