Description
A hearty and soul-warming dish made with black-eyed peas.
Ingredients

- 1 cup dried black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 2 bay leaves
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery; sauté until softened.
- Drain the peas and add them to the pot.
- Add water, salt, pepper, paprika, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaves and serve warm.
Notes
- Soaking peas makes them cook faster.
- Adjust seasoning to taste.
- Great with cornbread.
