Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 tablespoon olive oil

Instructions

  1. Rinse the black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrot, and celery; sauté until softened.
  4. Drain the peas and add them to the pot.
  5. Add water, salt, pepper, paprika, and bay leaves.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Remove bay leaves and serve warm.

Notes

  • Soaking peas makes them cook faster.
  • Adjust seasoning to taste.
