Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, sauté onion and garlic until soft.
- Add bell pepper, corn, black beans, cumin, chili powder, and salt. Cook for 5 minutes.
- Fluff quinoa with a fork and mix in the vegetable mixture.
- Serve warm.
Notes
- Adjust spices to your taste.
- Can add other vegetables as desired.
- Store leftovers in the fridge for up to 3 days.
