Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, sauté onion and garlic until soft.
  5. Add bell pepper, corn, black beans, cumin, chili powder, and salt. Cook for 5 minutes.
  6. Fluff quinoa with a fork and mix in the vegetable mixture.
  7. Serve warm.
