A delicious seafood lasagna layered with fresh seafood and creamy sauce.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 2 cups spinach
- 3 cups marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a pan, heat olive oil and sauté garlic until fragrant.
- Add shrimp and scallops, cooking until opaque.
- Stir in spinach and Italian seasoning, then season with salt and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Layer 3 lasagna noodles over the sauce, then spread ricotta cheese over noodles.
- Add half of the seafood mixture and a layer of mozzarella cheese.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan cheese on top.
- Bake for 30-35 minutes until cheese is bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
- Use any combination of seafood you like.
- Make sure to drain excess water from spinach.
- Can be made ahead and refrigerated before baking.
