Description
Royal icing is a hard, glossy icing used to decorate sugar cookies.
Ingredients

- 4 cups powdered sugar
- 3 egg whites or 5 tablespoons meringue powder
- 1 teaspoon lemon juice or vanilla extract
- Water as needed
Instructions
- In a large bowl, sift the powdered sugar to remove lumps.
- In another bowl, beat the egg whites or meringue powder with water until frothy.
- Add the powdered sugar to the egg mixture gradually, mixing well.
- Add lemon juice or vanilla and mix until smooth.
- If icing is too thick, add water a teaspoon at a time until desired consistency.
- If using for piping, keep covered with a damp cloth to prevent drying out.
Notes
- Store royal icing in an airtight container for up to 2 weeks.
- To achieve different colors, add food coloring as desired.
