Ingredients
- Powdered Sugar – 4 cups
- Egg Whites – 3 large or 6 tablespoons meringue powder mixed with 9 tablespoons water
- Water – as needed
- Lemon Juice – 1 teaspoon (optional)
Instructions
- In a mixing bowl, combine powdered sugar and egg whites.
- Mix on low speed until combined.
- Increase speed to medium and whip until soft peaks form.
- Add water slowly to achieve desired consistency.
- If using lemon juice, add it now.
- Test the icing by drawing a line with a spatula; it should hold its shape but not be too stiff.
Notes
- For stiff consistency, add less water.
- For a flood consistency, add more water.
- Cover unused icing to prevent drying.
