Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups powdered sugar
  • 2 large egg whites
  • 1 teaspoon lemon juice
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg and extracts, mix well.
  5. Gradually add the flour mixture, mixing until combined.
  6. Roll out dough and cut into desired shapes.
  7. Bake for 8-10 minutes until edges are lightly golden.
  8. Let cool completely before icing.
  9. For royal icing, beat egg whites and lemon juice, then gradually add powdered sugar.
  10. Color icing if desired and decorate cookies.

  • Use meringue powder instead of egg whites for a safer option.
  • Allow icing to dry completely before stacking cookies.
