Ingredients

- 2 fillets of salmon
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 cup of asparagus, trimmed
- 1 lemon, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup of mixed greens
- 1/4 cup of balsamic vinaigrette
- 2 chocolate lava cakes
Instructions
- Preheat the oven to 400°F (200°C).
- Rinse the quinoa and cook it in vegetable broth according to package instructions.
- Season the salmon fillets with salt, pepper, and olive oil, then place them in a baking dish.
- Add asparagus and lemon slices around the salmon.
- Bake for 15-20 minutes or until the salmon is cooked through.
- Serve the salmon over a bed of quinoa with asparagus on the side.
- Toss mixed greens with balsamic vinaigrette and serve as a side salad.
- Heat the chocolate lava cakes according to package instructions and serve warm.
