Juicy chicken breast stuffed with roasted red peppers, spinach, and mozzarella cheese.


Ingredients

  • 4 chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix roasted red peppers, spinach, and mozzarella.
  3. Cut a pocket in each chicken breast.
  4. Stuff each pocket with the mixture.
  5. Season chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  6. Place chicken in a baking dish.
  7. Bake for 25-30 minutes or until cooked through.
