Description

A delicious side dish combining roasted butternut squash, cranberries, and feta cheese.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 cup cranberries, fresh or dried
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread the squash evenly on a baking sheet.
  4. Roast in the oven for 25-30 minutes until tender and golden.
  5. In the last 5 minutes of roasting, add cranberries to the baking sheet.
  6. Remove from the oven and let cool slightly.
  7. Transfer to a serving dish and sprinkle with feta cheese and honey if using.
