Delicious rice krispie buckeyes made with peanut butter and chocolate.
Ingredients

- 2 cups Rice Krispies
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups chocolate chips
- 2 tablespoons shortening
Instructions
- In a bowl, mix peanut butter, powdered sugar, and vanilla extract until smooth.
- Stir in Rice Krispies until evenly coated.
- Form mixture into balls and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- Melt chocolate chips and shortening in a microwave-safe bowl.
- Dip each ball in chocolate, allowing excess to drip off.
- Return to the baking sheet and chill until chocolate hardens.
Notes
- Store in an airtight container.
- Can substitute crunchy peanut butter for a different texture.
- Add more Rice Krispies for a crunchier bite.
