- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 cups rhubarb, chopped
- 1/2 cup sugar
- 2 cups cream cheese
- 1 cup powdered sugar
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter.
- Press mixture into the bottom of a baking dish.
- In a saucepan, cook rhubarb and sugar until tender.
- In a bowl, beat cream cheese and powdered sugar until smooth.
- Add eggs and vanilla to the cream cheese mixture, mix well.
- Spread cream cheese mixture over crust.
- Top with cooked rhubarb.
- Bake for 30 minutes.
- Cool before cutting into squares.

- Use fresh rhubarb for the best flavor.
- Store in the refrigerator.
