  • 2 cups cream cheese
  • 1 cup powdered sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter.
  3. Press mixture into the bottom of a baking dish.
  4. In a saucepan, cook rhubarb and sugar until tender.
  5. In a bowl, beat cream cheese and powdered sugar until smooth.
  6. Add eggs and vanilla to the cream cheese mixture, mix well.
  7. Spread cream cheese mixture over crust.
  8. Top with cooked rhubarb.
  9. Bake for 30 minutes.
  10. Cool before cutting into squares.
