Ingredients

- 2 salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1/2 cup diced tomatoes
- 1/4 cup diced green bell pepper
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the salmon fillets with olive oil and Cajun seasoning.
- Place the salmon on a baking sheet.
- In a skillet, sauté onion, bell pepper, and garlic until soft.
- Add diced tomatoes and cook for 2 minutes.
- Stir in heavy cream and heat through.
- Pour the mixture over the salmon.
- Bake for 15-20 minutes or until salmon is cooked through.
