A rich and creamy soup inspired by the classic red lobster bisque.
Ingredients

- 2 cups lobster meat, cooked and chopped
- 1/2 cup butter
- 1/2 cup onion, chopped
- 1/4 cup celery, chopped
- 1/4 cup carrot, chopped
- 2 cloves garlic, minced
- 1/4 cup flour
- 4 cups seafood stock
- 1 cup heavy cream
- 1/4 cup sherry
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, celery, and carrot. Sauté until soft.
- Stir in garlic and cook for 1 minute.
- Sprinkle flour over the mixture and stir well.
- Gradually add seafood stock, stirring constantly.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add lobster meat, sherry, and heavy cream.
- Season with salt and pepper.
- Simmer for another 5 minutes.
- Garnish with parsley before serving.

- Adjust seasoning to your preference.
