Ingredients

  • 1 cup heavy cream
  • 4 cups seafood stock
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons butter
  • 1 teaspoon garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion, celery, and carrots. Cook until softened.
  3. Stir in garlic and thyme. Cook for another minute.
  4. Add seafood stock and tomato paste. Bring to a simmer.
  5. Add lobster meat and cream. Stir well.
  6. Season with salt and pepper. Simmer for 10 minutes.
  7. Blend the soup for a smoother texture, if desired.
  8. Serve hot, garnished with additional lobster meat, if desired.

Notes

  • Use fresh lobster for best flavor.
  • You can substitute shrimp or crab if lobster is unavailable.
