Description
A creamy and rich seafood bisque made with lobster and a blend of spices.
Ingredients

- 2 cups lobster meat, cooked and chopped
- 1 cup heavy cream
- 4 cups seafood stock
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrots, finely chopped
- 2 tablespoons tomato paste
- 2 tablespoons butter
- 1 teaspoon garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, celery, and carrots. Cook until softened.
- Stir in garlic and thyme. Cook for another minute.
- Add seafood stock and tomato paste. Bring to a simmer.
- Add lobster meat and cream. Stir well.
- Season with salt and pepper. Simmer for 10 minutes.
- Blend the soup for a smoother texture, if desired.
- Serve hot, garnished with additional lobster meat, if desired.
Notes
- Use fresh lobster for best flavor.
- You can substitute shrimp or crab if lobster is unavailable.
- This bisque can be made a day in advance and reheated.
