Ingredients

- 2 cups of cherry tomatoes
- 1 red bell pepper, chopped
- 1 cup of red quinoa
- 2 cups of vegetable broth
- 1 cup of pomegranate seeds
- 1/4 cup of red wine vinegar
- 2 tablespoons of olive oil
- Salt to taste
- Fresh basil for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth; bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- Meanwhile, heat olive oil in a pan and add chopped red bell pepper.
- Sauté for 5 minutes, then add cherry tomatoes.
- Cook until tomatoes are softened.
- Add cooked quinoa to the pan and mix well.
- Stir in pomegranate seeds and red wine vinegar.
- Season with salt and garnish with fresh basil before serving.
